Can you make brownies with black Beans?? YES!! Vegan Black Bean Brownie Recipe

As a busy mom of four, I am always looking for recipes that are not only gluten free but also SIMPLE! I do not always want to spend hours upon hours in the kitchen baking along with the clean up that is involved. One of the things that I love about this recipe is that all the work for it happens in my blender. No mixing and no other dishes involved. Wahoo!


Another thing that I love about this recipe is that it is not only gluten free but also naturally vegan and high in protein. Healthy, delicious, gluten free brownies...yes please!!!


Here is how easy they are. You will need 1 regular sized blender (I use a Ninja). Place in your blender:

1 - 28 oz can of well drained black beans

4 tbsp of dark cocoa powder (I use dark organic cocoa powder for a richer flavour)

1 cup of Simply Thriving Paleo Grain Free Flour Blend (you can also use our Simply Thriving A's Flour Blend)

1/2 tsp sea salt

1 cup maple syrup (you can also use honey or liquid sweetener of your choice, we prefer maple syrup in these brownies)

1/2 cup coconut oil

1 tbsp vanilla extract

1 and 1/3 cup of melted chocolate chips of your choice (to keep it vegan we use a vegan chocolate chips or a natural organic vegan chocolate chips)


Preheat oven to 350 degrees. Oil a 9x13 baking pan OR use parchment paper in your 9x13 baking pan. Place all of your ingredients into the blender and blend until it is nice and smooth. Often I blend for 1-2 minutes straight and then pulse for a minute or two to ensure that everything is nicely combined. When it is well combined and smooth, spoon your brownie mixture into your pan and spread evenly. Place your pan into the oven and allow to bake 18-28 minutes. You will know it is finished when you place a fork or cake tester into the middle of the cake and it comes out clean. When they are firm to the touch and the fork or cake tester comes out clean, remove from the oven and add icing if you prefer.


For the icing melt:

1/2 cup chocolate chips of your choice

2 tbsp coconut oil

Melt together and spread over the top in a thin layer.


You can eat right away or refrigerate. After they refrigerate for at least 2 hours they are more of a creamy fudge like texture. They are incredible! Simple. Delicious. Always gluten free. #simplythriving
