Thick, hearty, delicious Banana Bread...gluten free of course!

We are banana bread fans! None of those thin, falling apart slices for us. We like thick hearty slices of our banana bread that can hold up to a good slab of butter. Are you on the same page as us? We often make our banana bread 3 ways: regular gluten free with our A's Flour Blend using dairy and eggs, grain free gluten free using our Organic Buckwheat Flour/almond milk and no eggs or grain free gluten free refined sugar free using our Paleo Flour Blend/almond milk and eggs. It is beautifully moist, flavourful and hearty.


Gluten Free Banana Bread

Place all ingredients in mixing bowl:

3 large ripe bananas mashed

1/2 cup of your oil of choice (you can also use butter if you prefer)

1/3 cup milk of choice (cow, almond, etc...) with 2 tsp apple cider vinegar mixed in it

2 eggs (for egg free omit and add an extra 1 tsp of apple cider vinegar)

1/2 cup of sweetener of your choice (our preference is usually organic coconut sugar or organic cane sugar)

1 tsp vanilla extract

1 tsp baking soda

1/4 tsp salt

2 cups of Simply Thriving A’s Flour Blend OR Simply Thriving Organic Buckwheat Flour OR Simply Thriving Paleo Flour Blend

Optional add 1 tsp cinnamon

  1. Preheat oven to 350 degrees. Mix together all ingredients on low for 1 minute and then on medium until well combined (1-2 minutes). Grease bread pan. Spoon batter into bread pan. This is enough to make 1 - 9x5 loaf. Place on to centre rack of oven. Bake for 45-60 minutes until fully brown on top, firm to touch and tooth pick or cake tester comes out clean when inserted into centre. Take your bread out from the oven and allow it to cool fit about 5 minutes. Remove your bread from the pan and then allow it to cool on a wire rack prior to cutting. Enjoy!!!! Simple. Delicious.
